How To Make The Perfect Coffee

Step1.Pre-warming the cup: Before brewing, pre-warming the cup with hot water, to prevent the coffee turning cold too quickly, so that it will not taste sour under the effect of tannic acid, which, as component of coffee beans,makes cold coffee sour.

Step2.Moving the powder: Put the ground powder into the set-up coffee dripper, then gently pat the dripper to compact and level the powder, to guarantee the powder fully exposed to water in the following steps.

Step3.First pour or steaming: Hot water at 93 degrees shall be poured in a spiral move from the center of the powder to the outer rims for 2-3 rounds to make sure all of the powder fully exposed to water. Once absorbing water, the powder will “blossom” – the level surface will swell into a convex, giving out a light flavor of coffee. This step is one of the essential factors that determine a successful brewing, which shall be carefully dealt with.

Step4.Brewing: After the first pour, place the carafe on a piece of wet cloth for cooling. After 25-30s, when the water temperature falls to 89-91 degrees, start brewing. Step5.Serving: Before serving in a cup, gently sway the carafe to get the flavor well-mixed so that each cup of coffee will have the same taste.

Tips

During the whole process, from pre-warming the cup, serving (4 cups or less), to tasting, the period shall be limited within 2 minutes, otherwise the coffee will turn sour and bitter, without the original aroma and mellow.
